Everyone who has  ever sat at my dinner table knows the flavour. Whether I am serving a seared sea bass or grilled chicken or a slow-roasted lamb, there is a specific, aromatic depth that defines my kitchen.

And every single time, without fail, a guest will lean in and ask: "What did you put on this? The flavour is incredible."

They expect a long list of ingredients or a complicated marinade. Their eyes widen when I tell them the truth: It’s just one jar. No salt, no pepper, no extra herbs. Just the blend.

The 70/30 Rule in a Jar

This spice blend is the ultimate expression of my philosophy.

• The 70% (The Invisible Prep): The time I spend sourcing high-quality dried herbs and spices to mix this signature blend in bulk.

• The 30% (The Effortless Execution): Shaking that jar over fresh protein and putting it straight into the pan or oven or airfryer.

In a world that tells us we need a pantry full of a hundred different bottles, I have found peace in The One.

1. It Saves the Most Precious Commodity—Time: No more opening five different jars while your oil is smoking. No more second-guessing the ratios.

2. Consistency is Luxury: Because I have perfected the balance of dried herbs and spices, the meal is guaranteed to be delicious every time.

3. The "Gift" Factor: It has become so popular that friends ask for a jar to take home. There is no higher compliment for a cook than someone wanting to take your "flavour" into their own kitchen.

People are often terrified to skip the salt but when your spice mixture is balanced correctly, the dried herbs "bloom" in the heat of the cooking process coating the meat or fish perfectly. It makes life easy, and it makes the food sing.

Two years ago, a leader from my local youth program sat at my dining table with her family, took a bite of a chocolate cake I had whipped up for dessert and said, "Wow! This is delicious. I have never tasted a moist and light chocolate cake like this before … what is the secret?" I didn't realize then that I had just signed an unofficial cake contract. • The 70% (The Prep): A moist, rich crumb that doesn't try too hard.

• The 30% (The Theater): A thick, glossy chocolate fudge topping that looks—and tastes—like a warm hug.

We often think that to impress, we need to innovate. But for this youth program, the "luxury" isn't in the complexity; it’s in the consistency. They know that when I drop in with the cake, it’s going to be decadent, reliable, and made with the kind of care you can only taste in home baking.

It has become more than a recipe; it’s a tradition. It’s the "invisible effort" of showing up for your community with something high-quality every single time.

The topping is the star here. It’s not a light buttercream; it’s a dense, indulgent fudge that settles into the cake. It’s the kind of topping that makes people ask for the recipe before they’ve even finished their first slice.

Washington DC is a city of high energy and heavy history, but for a 2-day mini-break, I wanted something that felt like a sanctuary. I chose to anchor my stay at The Wharf, and it was the most strategic travel decision I’ve made all year.

Why The Wharf?

When I plan a trip, I look for picturesque quiet. The Wharf is DC’s newer waterfront pocket, and it offers a rare combination: it’s pedestrian-friendly, incredibly scenic, and tucked just far enough away from the political bustle to feel like a true retreat.

I picked a hotel right on the water for one reason: The Walkability. Being able to step out of the lobby and stroll along the Potomac is the "70% invisible prep" for a perfect day.

The "First Look" Tour

I have one non-negotiable rule whenever I land in a new city: The Hop-On Hop-Off City Sightseeing Tour. Some call it "touristy"—I call it mapping the terrain. It is the most efficient way to:

1. Get the historical lay of the land without the stress of driving.

2. Scout the neighborhoods that actually vibe with your style.

3. Mark exactly where you want to return for a deeper dive.

After one full loop around the Monuments and Capitol Hill, I knew exactly where I wanted to spend my "Active 30%" of the trip.

Where to Eat: French Flair on the Water

The Wharf is a culinary goldmine, but if you’re looking for elegance, the French influence here is unmatched. I spent an evening at a stunning French brasserie on the waterfront (LaVie—the Wharf has incredible options).

My Wharf Recommendations:

• For Atmosphere: Take a sunset walk down the pier before dinner.

• For Dining: Look for the spots with outdoor seating—the river breeze is the best appetizer.

DC is a city built on power, but if you plan it right, you can find the peace. 🥂

We’ve all been to that dinner party.

The host is sweating in the kitchen, and while the food eventually tastes great, you’ve spent three hours talking to other guests because the person who invited you is "just finishing the food."

In 2026, the "Stressed Chef" vibe is out. The 70/30 Rule is in.

The Philosophy

The 70/30 Rule states that 70% of the effort should be invisible, leaving you with only 30% of the execution to do once the first guest rings the doorbell.

But to get there, you have to plan in reverse.

Step 1: Start with the The End

Don't start with the grocery list. Start with the last 30 minutes of the night. Do you want people lingering over coffee?

The Strategy: If you want a relaxed, lingering evening, you cannot serve a meal that requires you to clear five sets of heavy dishes. You plan a "one-vessel" masterpiece.

Step 2: The "Reverse" Menu

I plan my menu based on passive vs. active time.

• The Passive Base (70%): Something I can cook three hours early. It doesn't wilt, it doesn't get mushy, and it actually tastes better as the spices sit. It sits on the worktop covered or kept in the food warmer if  needed to stay warm, acting as the heavy lifter for the meal.

• The Active Flash (30%): The grilled meat, chicken or fish . I dab them in spices beforehand, so all I have to do is slide the tray into the oven to cook or re-heat while my guests are having their first drink.

Step 3: The "Dab" Efficiency

The reason I’m obsessed with the "dab" method isn't just about flavor—it’s about cleanliness. By prepping your sauces and dressings in small bowls before anyone arrives, you eliminate the "chopping board clutter." Your kitchen stays a "social zone," not a "work zone."

Hosting isn't about proving you can cook; it's about proving you can lead an experience. When you plan in reverse, you aren't just preparing food—you’re preparing your own availability. The best thing you can serve your guests isn't a 5-star dish; it's your own undivided attention.

We’ve all been there: it’s a weeknight, you want a hearty food packed with nutrients, but you don't have 40 minutes to wait on brown rice or the patience to fluff up finicky quinoa.

I cooked up this batch today (pictured) with a medley of garden veggies and paired it with homemade spice-rubbed chicken thigh. It’s nutty, chewy, and—honestly—the most underrated staple in my pantry.

While bulgur often gets overshadowed by "trendy" grains, bulgur’s stats are hard to beat:

• Bulgur has about 8g of fiber per cup—that's more than quinoa and double that of brown rice. It keeps you full and your digestion steady.

• It scores a 46 on the GI scale compared to 70+ in rice , meaning no late night energy crashes. It provides slow-release fuel for the brain and body.

• It’s an incredible source of Manganese (for bone health) and Magnesium (the "relaxation" mineral).

How I Made This

I wanted the bulgur to carry as much flavor as the chicken. I simmered it with:

• A base of blended tomatoes, peppers, onions, garlic and ginger. I added a pinch of curry powder, thyme, smoked paprika  and 4 bay leaves.

• I added sweet corn, peas, carrots, and green beans for texture and colour when the bulgur wheat was almost cooked.

I  rubbed the chicken thighs in my homemade spice mix and sprayed with extra virgin olive oil before grilling in the oven.

The result? A 15-minute dish that tastes like it took an hour.

Most people walk past the seafood stall thinking "too expensive," but buying direct often beats supermarket prices—especially if you catch them during the morning rush.

Why I’m stoked about this find (besides the taste):

• Lobster is one of the densest sources of Choline and B12.

• It’s loaded with Zinc and Selenium.

• It has a higher protein-to-calorie ratio than almost any other meat.

I prepared these by dabbing the lobster in a blend of garlic butter and spices, before popping them in the oven to grill.. We served them alongside roasted potatoes,  veggies and homemade Thermidor sauce that honestly stole the show.

They say Istanbul is where East meets West, but for me, it was where meticulous planning met mouth-watering discovery. From navigating the bustling streets to finding the perfect bargain and indulging in a sunset sail, every detail of this trip was built on a foundation of deep-dive research.

Choosing the right home base is the first step in any itinerary. We stayed at the Radisson Blu, which sat slightly outside the frantic energy of the city center.

Staying outside the center often provides better amenities and a quieter sanctuary after a day of exploring.

Despite being away from the hub, it was incredibly easy to navigate via Uber or local taxis.

Tip: Always map out your transit routes beforehand to ensure "out of the center" doesn't mean "out of reach."

One of the most stressful parts of any trip is getting from the tarmac to your hotel. I spent a lot of time on TripAdvisor before settling on Safe Airport Transfer Istanbul.

Our flight landed at 03:45 AM. They provided clear meetup directions and kept us informed via regular WhatsApp updates.  We started with a basic van for our family of four and upgraded to a Mercedes Vito for the return (with a return discount).  Flexibility is key; you can pay online or cash to the driver, who will even check live exchange rates if you prefer to pay in Turkish Lira.

🍳 The Culinary Highlights: From Local Gems to Fine Dining

Food is the soul of Istanbul, and we experienced both ends of the spectrum:

Breakfast at Velvet Cafe: This family-run gem in Balat is a non-negotiable stop. Yuksal, who runs the cafe with his sister, explained every nutritious component of the menu to us. It felt like being a guest in a private home.

Dinner at Del Mare: For a special evening, we crossed to the Asian side to dine at this lovely seafood restaurant. The atmosphere and food are exquisite, but be sure to confirm the prices of your dishes before ordering to ensure the bill matches your expectations!

No trip to Istanbul is complete without seeing it from the water. Instead of the crowded public ferries, we opted for a luxury yacht cruise on the Bosphorus.  With only about 15 guests on board, the experience felt intimate and exclusive.

🛍️ I never travel without a plan for shopping, and Istanbul is a treasure trove for those who do their research. We bypassed the typical tourist shops for these local favorites:

• Olivium Outlet Center: Excellent for Turkish brands and just 5 minutes from our hotel.

• Istinye Park: A high-end, contemporary mall with a mix of local and international stores.

• Venezia Mega Outlet: A themed mall with great outlet pricing and a unique atmosphere.

***Good research is the difference between a stressful trip and a seamless adventure. By mapping out the transit routes, dining gems, and shopping outlets beforehand, we spent less time staring at our phones and more time enjoying the magic of Turkey.
